Lemon Sponge Pudding
Lemon Sponge Pudding is an moderately easy dinner. Made with 2 c. sugar, 1/3 c. butter, 3 eggs, separated, 3 tbsp. flour and juice and rind of 2 lemons, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cream sugar and butter well.
Add flour, juice and rind of lemons and milk.
Next, add egg yolks.
Mix all thoroughly.
Fold in stiffly beaten egg whites.
Pour into greased custard cups or casserole dish.
Place cups in pan of water and bake in 325Β° oven for 1 hour or until brown like custard.
Serve cold with whipped cream.
