Lemon Pudding
Lemon Pudding is an moderately easy dinner. Made with 2 eggs, separated, juice of 2 lemons, grated rind of 1 lemon, 1 c. granulated sugar and 1 c. sweet milk, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Beat egg whites; set aside.
Beat egg yolks and sugar together.
Add milk, lemon juice, rind, flour and melted butter. Fold in beaten egg whites.
Pour into 1-quart baking dish (greased).
Set in shallow pan of water and bake at 350Β° until firm and golden brown (about 35 to 40 minutes).
This dessert has a firm cake on top with a soft pudding underneath.
Best when completely cool.
