Lemon Pie (Tart)
Lemon Pie (Tart) is an moderately easy dinner. Made with 3/4 c. sugar, 1 1/2 c. hot water, 1/2 tsp. grated lemon rind, juice of 2 large lemons and 2 egg yolks (save whites), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Mix first 3 ingredients and boil for 10 minutes; mix juice of lemons, egg yolks and cornstarch until smooth.
Add to water mixture; add butter and stir until thickened.
Pour into cooled pie shell and top with meringue made from 2 egg whites and 4 tablespoons sugar (beat until stiff peaks form).
Spread over filling, sealing to crust.
Brown in 350Β° oven.
