Lemon Meringue Pie
Lemon Meringue Pie is an moderately easy dinner. Made with 1 1/2 c. sugar, 1/3 c. plus 1 tbsp. cornstarch, 1 1/2 c. water, 3 egg yolks, slightly beaten and 3 tbsp. margarine, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Bake pie shell in 400Β° oven.
Mix sugar and cornstarch in 1 1/2-quart saucepan.
Stir in water gradually.
Cook over medium heat, stirring constantly, until mixture thickens and boils; boil and stir 1 minute.
Add the beaten egg yolk to hot mixture; boil 1 minute.
Remove from heat; add margarine, lemon juice and food coloring (optional).
Pour into pie shell.
Spoon meringue over hot pie filling, carefully sealing meringue to edge of crust.
Bake until brown.
