Lemon Curd Spread
Lemon Curd Spread is an easy dinner. Made with 3 eggs, 1 cup sugar, 1/2 cup lemon juice (about 2 lemons), 1/4 cup butter or margarine, melted and 1 tbsp. grated lemon peel, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In heavy saucepan beat eggs and sugar.
Stir in lemon juice, butter and lemon peel.
Cook and stir over medium-low heat for 15 minutes or until mixture is thickened (160 degrees). Cover and store in refrigerator.
Yield 1 2/3 cups.
Spread on hot buttered biscuits or toast.
