Lemon Coconut Frosting
Lemon Coconut Frosting is an moderately easy dinner. Made with 2 c. sugar, 1 1/2 c. water, 2 tbsp. cornstarch, 1 tbsp. grated lemon rind and 2 tbsp. cornstarch, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Dissolve cornstarch in 1/2 cup water and set aside.
Bring 1 cup water to a boil; stir in sugar, lemon rind and lemon juice. Return to boil and cook 7 minutes, until candy thermometer reaches soft ball stage.
Gradually stir in cornstarch mixture.
Cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
Remove from heat; stir in coconut.
Stir frosting just before spreading on cake.
Will cover 1 three layer cake.
