Lemon Chicken
Lemon Chicken is an moderately easy dinner. Made with 3 whole broiler-fryer chicken breasts, 3 tbsp. butter or margarine, 1 tbsp. flour, 1/2 tsp. salt and pinch of tarragon, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Have butcher bone chicken breasts.
Remove skin and cut meat into 10 or 12 strips.
Melt butter in skillet over high heat.
Add chicken.
Sprinkle with flour, salt and tarragon.
Cook, stirring constantly, for 5 minutes.
Add chicken broth and lemon slices. Lower heat, cover and cook 3 minutes longer.
Sprinkle with chopped parsley.
Serve with hot, cooked rice.
Makes 4 to 6 servings.
