Lemon Chess Pie(A Dessert of Early Virginia)

Beat the eggs with a fork or wire whisk and gradually add the sugar.

Add the lemon juice and rind; mix well.

Slowly add all ingredients until completely blended.

Pour into an 8-inch pie shell and bake at 350° for 35 to 40 minutes or until brown or until a knife inserted into the filling comes out clean.
