Lemon-Blueberry Fluff
Lemon-Blueberry Fluff is an moderately easy dinner. Made with 1 (3 oz.) pkg. lemon-flavored gelatin, 1 c. boiling water, 1/4 tsp. grated lemon peel, 2 tbsp. lemon juice and 3/4 c. cold water, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In large bowl dissolve gelatin in boiling water.
Stir in lemon peel, lemon juice and 3/4 cup cold water.
Chill until partially set.
Add unbeaten egg whites to gelatin mixture.
Beat with electric mixer until mixture is light and fluffy, about 1 to 2 minutes.
Pour into 8 (5-ounce) custard cups.
Chill until firm. (Slight separation into layers may occur.)
