Lemon-Blueberry Bread
Lemon-Blueberry Bread is an moderately easy dinner. Made with 1/3 c. margarine, 1 c. granulated sugar, 3 tbsp. fresh lemon juice, 2 eggs and 1 1/2 c. sifted flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In large bowl, mix margarine, sugar and lemon juice.
In another bowl, sift flour, baking powder and salt.
Add flour mixture to margarine mixture alternately with the milk, stirring just enough to blend.
Stir in blueberries and grated rind.
Pour batter into greased and floured loaf pan.
Bake at 350Β° for about an hour and 10 minutes.
Cool and store, foil wrapped, for one day before slicing.
