Lemon Bars
Lemon Bars is an moderately easy dinner you can prepare in about 1 hour 50 minutes. Heat oven to 350Β°.
Grease and flour a baking pan.
In a bowl beat butter until creamy.
Beat in 1/2 cup confectioners sugar and then work in 2 cups flour to make a smooth dough.
Press dough in an even layer in the prepared pan.
Bake 15 minutes until slightly puffed.
Next, beat eggs in a bowl with a wire whisk.
Beat in granulated sugar, lemon peel and juice.
Sift remaining 1/4 cup flour over egg mixture and stir in.
Prick top of crust with a fork about an inch away from each other all over.
Pour egg mixture over crust and bake 30 minutes until egg mixture is set. Remove from oven.
Cool and sprinkle top with 1 1/2 tablespoons confectioners sugar.
