Make 1 pie at a time.

Preheat oven to 425°.

Put spinach, cheese and onion into pie shells.

Pour eggs, milk, salt and pepper over spinach mixture.

Bake at 425° for 15 minutes; turn oven down to 350°.

Bake for 20 to 25 minutes.

These do not freeze well.
