In a medium bowl, combine all ingredients except oil.
In a large skillet, heat 1/4 inch of oil over high heat.
Potato mixture by level tablespoonfuls into hot skillet.
Brown about 1 to 2 minutes per side.
Keep warm.
Repeat with remaining potato mixture.
(Can be made ahead.
Cool and refrigerate, covered, up to 24 hours.
Reheat on cookie sheets in a preheated 400Β° oven for 5 minutes.)
