Kim's Eggplant Pie
Kim'S Eggplant Pie is an impressive dinner. Made with 2 c. eggplant, boiled, 1/2 c. onion, 1/4 c. bell pepper, 2 tbsp. butter and 1 tbsp. flour, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Saute onion and bell pepper in butter until tender.
Add flour.
Stir in soup, sugar, salt, pepper and oregano.
Heat and stir until bubbly.
Remove from heat.
Stir half of the mixture into the bowl of eggs and return to skillet.
Add tomato, cheese and eggplant.
Pour into pie crusts.
Bake at 350Β° for 30 to 35 minutes.
Great hot or cold.
