Key West Bollos(Black-Eyed Pea Fritters; Boy-O'S) is an easy dinner. Made with 1 lb. black-eyed peas, 4 to 6 cloves garlic or more to taste, 1 tsp. hot sauce or to taste, 1 to 2 tsp. salt or to taste and oil for frying, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Cover peas with water and soak overnight.
Remove skins by rubbing between hands.
Cover beans with additional water in another bowl and skins should rise to the surface; drain.
Combine peas, garlic, hot sauce and salt in work bowl of food processor or blender, adding small amount of water to keep mixture moving. Process until mixture has a fine consistency.
Beat mixture by hand until it is like cake batter.
Heat oil to 365Β°.
Drop by teaspoonfuls into hot oil.
Turn to brown on both sides.
Drain on paper towels.
Test for doneness and should look like hush puppies. Makes 4 to 5 dozen.
Bollo mix is always best if made a day or two ahead to allow flavors to marry, getting all the work out of the way.
