Key Lime Pie
Key Lime Pie is an moderately easy dinner. Made with 1 envelope unflavored gelatin, 1/4 c. cold water, 4 eggs, separated, 1 c. sugar, divided and 1/3 c. lime juice, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Soften gelatin in water.
Beat egg yolks.
Add 1 cup sugar, lime juice and salt.
Cook over hot water, stirring constantly until thickened.
Grated gelatin; stir until gelatin is dissolved.
Tint pale green with coloring; cool.
Beat egg whites stiff, but not dry. Add remaining sugar slowly, beating addition.
Fold into lime mixture. Pour into baked 9-inch pie shell.
Chill until firm.
