June's Chicken Casserole
June'S Chicken Casserole is an moderately easy dinner. Made with 2 chicken breasts, 2 carrots, 2 sticks celery, 1 onion and 8 to 10 slices bread, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Boil chicken (do not add salt to water).
Cool and debone. Grate or dice carrots, celery and onion.
Boil until soft.
Beat egg.
Mix with drained carrots, celery and onion.
Melt butter and cube bread.
Mix all ingredients except chicken.
Mix 1 cup broth (made from cooking chicken) with soup.
(If you don't have enough broth to make 1 cup, add juice from boiling carrots.)
