Boil potatoes, peel and put into potato ricer (set aside to cool).

Mix the flour and grated cheese.

Add cooled potatoes, salt, pepper, butter and eggs.

Mix until dough no longer sticks to hands, adding more flour if needed.

Roll out small pieces at a time on floured board, making a rope shape.

Cut into 1-inch pieces.

Drop into boiling water about 15 minutes.

Drain and rinse with warm water.
