Jessica's Favorite Rice Pudding
Jessica'S Favorite Rice Pudding is an moderately easy dinner. Made with 2/3 c. cheap rice (not instant, not uncle ben's), 2 qt. milk, dash of salt, 5 large eggs and 1 c. sugar, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Soak rice in warm water for a few hours or overnight.
Drain and put in a large heavy pot with salt and milk.
Heat, stirring often.
Bring to a boil; reduce and simmer for 20 minutes.
Beat eggs, sugar and vanilla.
Remove rice mixture from heat; stir in egg mixture.
Return to heat until it comes to a slow boil.
As soon as it starts to boil, remove from heat.
Pour into a large bowl; sprinkle with cinnamon.
Cool 2 hours, then refrigerate.
