Jambalaya
Jambalaya is an moderately easy dinner. Made with 3 chicken breasts, cooked, deboned and cubed, 6 polish sausage links, sliced, 6 onions, diced, 3 bell peppers, chopped and 7 stalks celery, chopped, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cook chicken, saving broth.
Fry sausage (15 minutes).
Add onions, peppers and celery to chicken broth and tomato juice. Bring to a boil.
Add parsley flakes, green onions, chicken and sausage and bring to a boil.
Add rice.
Add water if too dry. Cover pot and cook on low heat for approximately 40 to 50 minutes. (Every 20 or 25 minutes, stir twice, turning rice from bottom of pot.)
Additional water may be needed throughout cooking time. Will serve at least 15 people.
