Jambalaya
Jambalaya is an moderately easy dinner. Made with 2 lb. sausage, chicken, shrimp (in any combination), 1 medium onion, 1/2 bell pepper, 2 cloves garlic, minced and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
In a large pot, saute chopped sausage and chicken in a little oil or butter until done. Chop vegetables and add.
Cook until soft.
Add spices and 3 cups of water, turn up the heat and bring to a boil.
Add tomato paste and rice.
Stir well.
Add peeled shrimp.
Cover the pot and turn the heat down to low. Cook for 20 to 30 minutes or until rice is done.
Converted rice is especially good in this recipe.
Serves 6.
