Jamaican Festival
Jamaican Festival is an moderately easy dinner. Made with 1 1/2 c. flour, pinch of allspice, 1/2 tsp. salt, 3/4 tsp. baking powder and 3 tbsp. cornmeal, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Sift the first four ingredients.
Add the cornmeal and sugar. Add vanilla to the water.
Add the water to the dry ingredients, binding to form a soft dough.
Knead lightly.
Leave, covered, for 30 minutes.
Divide the dough into 8 portions.
Flour hands.
Knead lightly then roll and pull each portion to form a 6 x 1 1/2-inch length about 1/8-inch thick.
Dip Festival in flour and cornmeal mixture, then fry in plenty of hot oil until golden brown.
Pierce with a fork while frying.
If serving with fried fish, fry the Festival after the fish in the same oil.
Makes 8.
