Jalapeño Pepper Jelly
Jalapeño Pepper Jelly is an moderately easy dinner. Made with 1 c. red or green bell peppers, chopped very fine, 8 to 9 fresh jalapeños, deveined, seeded and chopped fine, 6 1/3 c. sugar, 1 1/3 c. vinegar and 1 bottle certo, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Combine bell peppers, jalapeños, sugar and vinegar in a saucepan.
Add food coloring.
Bring to a boil; remove from heat and add Certo.
Return to heat until boiling point is reached; remove.
Add lime juice.
Pour into sterilized jars, stirring often to distribute peppers.
Pour melted paraffin on top of jars to seal.
