Jalapeño Corn Bread
Jalapeño Corn Bread is an moderately easy dinner. Made with 4 slices bacon, 2 c. yellow cornmeal, 1 tsp. salt, 2 tbsp. sugar and 1/2 tsp. soda, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Fry bacon until crisp; break into small pieces.
Combine cornmeal, salt, sugar and soda.
Add milk and eggs; stir until well mixed.
Add garlic salt, onion, peppers, corn and bacon pieces.
Beat well for 1 minute.
Grease 10-inch iron skillet with bacon fat.
Pour 1/2 of cornmeal mixture into pan; top with half the cheese.
Spoon on remaining cornmeal mixture; top with remaining cheese.
Bake in preheated 350° oven for 35 minutes. Yield: 8 servings.
