Italian Zucchini Casserole
Italian Zucchini Casserole is an moderately easy dinner. Made with 2 to 2 1/2 lb. zucchini, 4 tbsp. oil or oleo, 1/2 c. chopped onion, 1/2 c. chopped green pepper and 4 oz. can mushrooms, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Slice zucchini into 1/2-inch pieces, put in boiling water. Boil 4 to 5 minutes.
Drain.
Place in baking dish.
Saute onion and peppers in oil, add spaghetti sauce, Cheddar cheese, mushrooms, paste and water.
Mix well and pour over zucchini. Sprinkle top with Parmesan cheese.
Bake 350Β° about 25 to 30 minutes.
Cook in microwave for 13 minutes, turning pan once.
Let stand for 5 to 10 minutes.
