Italian Vegetable Soup is an impressive dinner. Made with 1 lb. ground round, 1 c. each, diced onion, sliced celery and sliced carrots, 2 cloves garlic, minced, 1 can (16 oz.) tomatoes and 1 can (15 oz.) tomato sauce, this recipe delivers authentic, satisfying flavors. Brown ground round in large heavy kettle; drain if necessary. Add rest of ingredients except cabbage, green beans and macaroni. Bring to boil and simmer 20 minutes, covered.
Add rest and bring to boil, then simmer until all is tender.
If you like thinner soup, add more water.
Makes 12 servings.
