Italian Sausage Lentil Soup
Italian Sausage Lentil Soup is an moderately easy dinner. Made with 1 lb. dried lentils, 2 qt. broth or bouillon (chicken), 1 1/2 c. diced potatoes, 1 medium onion, chopped and 1/2 c. sliced carrots, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Lentils large kettle.
Bring to a boil. Cover simmer about 15 minutes. Add vegetables and simmer
20 minutes.
Add sausage.
Cover and heat about 10 to 15 minutes. Season parsley, a pinch of thyme, pinch of basil and a bay leaf, during last 10 minutes.
Remove bay leaf before serving.
Makes 3 quarts.
