Italian Rice Balls is an moderately easy dinner. Made with 1 c. cooked rice, cooked according to directions (not instant), pepper and parsley, 3 eggs, 1 c. fine bread crumbs and 1/4 lb. pepperoni, chopped fine, this recipe delivers authentic, satisfying flavors. Add pepper and parsley to rice; let cool.
Mix all ingredients and form into balls.
Cook in oil until golden brown (drain on paper towel).
