Italian Potatoes
Italian Potatoes is an moderately easy dinner. Made with 1 (28 oz.) can whole tomatoes, crushed, 1/2 to 1 tsp. dried oregano leaves, 1/4 tsp. salt, 6 c. sliced 1/4-inch potatoes (6 medium) and 1 c. sliced 1/8-inch onion, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Heat oven to 400Β°.
Combine tomatoes, oregano and salt.
In greased 13 x 9-inch baking pan, place layer of potatoes and onion. Top with half of tomatoes and 1/4 cup cheese.
Repeat layers. Drizzle with olive oil.
Cover with aluminum foil.
Bake for 1 1/2 to 2 hours or until fork-tender.
If potatoes become dry during baking, add 1/2 cup of water.
