Italian Cream Cake
Italian Cream Cake is an moderately easy dinner. Made with 2 c. white sugar, 1 tbsp. vanilla, 1/2 tsp. salt, 1 c. shortening and 1 c. buttermilk, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cream sugar and shortening together well.
Add butter and beat until fluffy.
Add egg yolks, one at a time, beating after each. Add vanilla and buttermilk alternately with flour, soda and salt, which have been sifted together.
Mix well.
Add coconut and pecans.
Fold in beaten egg whites.
Pour into 3 greased and floured layer cake pans.
Bake at 350Β° for 30 minutes.
Cool and frost with Cream Cheese Frosting.
