Italian Country Chicken
Italian Country Chicken is an moderately easy dinner. Made with 3 tbsp. olive oil, 1 large onion, cut into eighths, 2 cloves minced garlic, 1/2 c. broccoli florets and 1/2 c. shaved carrots, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Heat oil in heavy large skillet over medium heat.
Add onion, garlic, broccoli and carrots.
Cook 10 minutes, stirring occasionally.
Add chicken and stir until cooked through, about 5 minutes.
Mix in artichoke hearts with liquid, peppers with liquid and olives.
Heat through.
Season with salt and pepper.
Pour over pasta and toss well.
Serve with Parmesan cheese for sprinkling. Serves 6 to 8.
