Italian Chicken
Italian Chicken is an moderately easy dinner. Made with 1 cut-up fryer, 2 tbsp. oil, 1/2 c. finely diced celery, 1 small minced garlic clove and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In a large skillet, brown chicken on all sides in oil Add celery, garlic and parsley.
Cook 2 minutes and stir.
Add salt, bay leaf and wine.
Cover and simmer until chicken is tender, about 40 minutes.
If desired, thicken sauce with 1 tablespoon of flour that has been blended with 1 tablespoon of water.
Serves 4.
