Italian Chicken
Italian Chicken is an moderately easy dinner. Made with 1 tbsp. cornstarch, 1 (14-1/2 oz.) can del monte italian-style stewed tomatoes, 1/3 c. italian seasoned bread crumbs, 1/3 c. grated parmesan cheese and 4 chicken breasts, boneless and skinless, this recipe delivers authentic, satisfying flavors. In a small saucepan, dissolve cornstarch in tomatoes.
Cover, cook over medium low heat, stirring constantly until thickened; keep warm.
Combine bread crumbs and parmesan cheese.
Dip chicken into crumbs, coating well.
Fry chicken in oil 3 to 4 minutes on each side.
Place one slice cheese on each piece of chicken.
Cover and cook until melted.
Place on serving plate; top with tomatoes; sprinkle with additional parmesan cheese, if desired.
