Irish Soda Bread
Irish Soda Bread is an moderately easy dinner. Made with 1 c. oatmeal, 1/3 c. rye flour, 2 2/3 c. flour, 1 1/2 tsp. baking soda and 2 tsp. salt, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Grind the oatmeal in a food processor or blender until it is as fine as cornmeal.
Sift with the rye, wheat, soda and salt into a large bowl.
Stir in 1 1/2 cups buttermilk, mix quickly.
Shape the dough into 2 rounds.
Place into two 8-inch greased cake pans. Slash deep X across the tops, pour 1 tablespoon buttermilk into center of each cake.
Bake 5 minutes in preheated 450° oven. Reduce heat to 375°, continue baking for 30 minutes or until tops are lightly browned and bottoms are well browned.
Cool on rack.
