Irish Soda Bread
Irish Soda Bread is an moderately easy dinner. Made with 3 c. unbleached flour, 2/3 c. sugar, 1 tbsp. baking powder, 1 tsp. baking soda and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Combine dry ingredients together in large mixing bowl.
Stir in currants.
Combine eggs, 1 3/4 cups buttermilk and butter.
Add to dry ingredients until flour is moistened.
Add 1/4 cup more buttermilk if needed.
Batter should be thick and with small lumps but not dry.
Turn batter into 2 greased bread pans.
Bake at 350Β° for 45 to 60 minutes.
Remove from pans immediately and allow to cool thoroughly before slicing.
