Irish Fruit Cakes
Irish Fruit Cakes is an moderately easy dinner. Made with 1 1/2 lb. flour, 1 lb. sugar, 1 lb. butter or margarine, 3 lb. raisins and 1 1/2 lb. mixed peel, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cream the butter and sugar well.
In separate bowl, mix salt, cinnamon and nutmeg with flour.
Alternately add eggs and flour mixture to creamed butter and sugar.
Add fruit, lemon rind, whiskey and lemon juice.
Place in a well-greased pan and bake at 350° for an hour, then at 300° for another hour.
Remove from oven and let cool.
When cool, pour more whiskey on top and wrap in foil.
Store in airtight tin.
Makes 3 cakes.
