Indian Pudding
Indian Pudding is an moderately easy dinner. Made with 6 tbsp. corn meal, 6 c. milk, scalded, 1/2 c. brown sugar, 1/4 lb. butter and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine the corn meal with the scalded milk.
Add the sugar, butter and salt.
Let the mixture cool, then add the lemon rind, ginger, raisins and eggs.
Bake in a buttered 3-quart casserole, set in water, for 2 hours in a slow oven (300Β°).
