Indian Pudding
Indian Pudding is an moderately easy dinner. Made with 4 1/2 c. milk, 1 1/2 c. golden raisins, 1 c. yellow cornmeal, 1/2 c. dark molasses and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Heat oven to 300Β°.
Place 3 cups milk in 2-quart saucepan over medium heat.
Scald milk, stirring constantly.
Do not boil.
Add raisins.
Place cornmeal in small mixing bowl, stir in 1 cup milk. Add to milk in pan, stirring constantly.
Cook until mixture thickens.
Stir in molasses, salt, sugar, ginger, nutmeg and butter.
Stir well to blend.
Pour mixture into 2-quart casserole dish and grease well with butter.
