Icebox Coconut Cake
Icebox Coconut Cake is an easy dinner. Made with 1 c. sugar, 2 pkg. fresh or frozen coconut, 1 (8 oz.) carton whipped topping, 1 box yellow cake mix and 1 (8 oz.) sour cream, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Combine sugar, coconut (save some for topping on cake icing), sour cream and whipped topping.
Refrigerate overnight.
Next day, make cake in 2 layers.
Cool and split; frost with filling.
I heat 3/4 cup milk and a little sugar to sweeten and pour over each layer before frosting.
Put in refrigerator until ready to serve.
