Icebox Coconut Cake
Icebox Coconut Cake is an moderately easy dinner. Made with 1 duncan hines deluxe yellow cake mix, 2 eggs, 1 1/3 c. water, 2 c. sugar and 1 c. milk, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Preheat oven to 350Β°.
Grease and flour a 9 x 13-inch baking pan.
Mix cake using the eggs and water according to package directions.
Bake 30 minutes or until cake center springs back when pressed lightly.
Five minutes before cake is done, combine sugar and milk in saucepan and bring to a full boil.
Remove from heat and add flavoring.
Remove cake from oven.
Pierce with a fork at least 12 places.
Pour the hot mixture over cake.
Put in refrigerator until completely cool.
Spread Cool Whip over the top of the cake.
Press the coconut lightly into the Cool Whip.
Chill until ready to serve.
