Cooks, before the Civil War, would pinch off pieces of cornbread and give them to the dogs hanging around their open air kitchens to quiet their barking.
As they threw them the small pieces of cornbread, they would call out, "Hush, dogs" or "Hush, puppy," and thence the name for these delicious morsels.
