Hunter's Squirrel Gumbo
Hunter'S Squirrel Gumbo is an moderately easy dinner. Made with 2 squirrels, 6 tbsp. cooking oil, 3 tbsp. flour, 3 c. water and 1/2 c. chopped onions, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Clean and wash squirrels thoroughly.
Cut into serving pieces and dredge well with mixture of flour, salt and black pepper. Brown well in heavy skillet with oil (iron skillet is excellent). Remove squirrels.
Add flour to make roux.
Add water; stir well (enough water for thin broth).
Add onions, enough chopped celery to taste (approximately 1 stalk), okra, salt and pepper.
Place squirrels back in skillet; bring to boil.
Reduce heat to very low, cover and cook until meat falls off bone.
File may be added before serving, but okra serves some purpose.
Serve over hot rice.
