Humus
Humus is an moderately easy dinner. Made with 1 can chickpeas, 1/2 c. sesame seed oil, 1/2 c. lemon juice, 1 tsp. salt and black pepper to taste, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Drain and mash the chickpeas well.
Puree in blender.
Beat oil and lemon juice and add to the chickpea mixture.
Add salt, pepper and garlic to taste.
Spread thinly on plate and make deep swirls.
Dribble olive oil in the ruts.
Decorate with chopped parsley, green olives and pickles.
Serve with pita bread or crackers as an appetizer.
