Hummingbird Cupcakes
Hummingbird Cupcakes is an moderately easy dinner. Made with 3 c. all-purpose flour, 2 c. sugar, 1 tsp. baking soda, 1 tsp. ground cinnamon and 3 eggs, beaten, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine first 4 ingredients in large mixing bowl.
Add eggs and oil, stirring until dry ingredients are moistened.
Do not beat! Stir in vanilla, pineapple, pecans and bananas.
Spray cupcake pans or use cupcake papers.
Fill 1/2 full.
Bake at 350Β° for 25 minutes.
Makes about 6 dozen cupcakes.
May be made into layers also and iced with cream cheese frosting.
