Hot Potato Salad
Hot Potato Salad is an moderately easy dinner. Made with 6 medium potatoes, boiled in their skins, 6 slices bacon, 3 tbsp. sugar, 1/2 c. chopped celery or 1/2 tsp. celery seed and 3/4 c. chopped or thinly sliced onions, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Dice bacon and fry until crisp.
Remove from pan and reserve 1/3 cup bacon fat.
Cook onions in fat until yellow.
Mix in flour, sugar, salt and celery seed, if used, and a dash of pepper. Stir in water and vinegar gradually.
Pour over sliced potatoes and add chopped celery, if used, and bacon.
Keep warm over hot water until ready to serve.
