Brown sausage.
Drain and cool.
Cut into small pieces.
In small bowl, mix the reserved egg yolk with 1 teaspoon water.
In large bowl, combine all other ingredients.
Pour into pie crust. Top with additional crust and brush with the egg and water mixture.
Bake at 400Β° for 1 hour and 15 minutes.
