Hot German Potato Salad
Hot German Potato Salad is an moderately easy dinner. Made with 6 to 8 medium size potatoes, 8 to 12 slices bacon, 1/3 c. bacon drippings, 2 tbsp. flour and 6 rounded tsp. sugar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Boil potatoes in their skins until tender.
Peel and slice thinly.
Broil bacon until crisp.
In skillet, heat 1/3 cup of bacon drippings.
Add flour, sugar, salt, celery seed and pepper. Mix together vinegar and water.
Stir and gradually add vinegar and water to bacon fat mixture.
Cook until thickened.
Pour mixture over potatoes.
Add onion and the crumbled bacon.
Stir through.
Serve warm.
