Hopping John
Hopping John is an moderately easy dinner. Made with 1 ham hock, halved, 1 (8 oz.) pkg. dried black-eyed peas, 1 small onion, chopped, 1 tsp. salt and 1 tsp. cayenne pepper (optional), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Place ham hock in large saucepan; cover with water.
Cook 30 minutes.
Add peas, onion, salt, pepper and enough water to cover. Cook, covered, for 45 minutes, adding water as needed.
Stir in rice; cover.
Cook for 30 minutes or longer or until rice and peas are tender.
May add 1 can tomatoes, if desired.
