Hominy and Corn Casserole
Hominy And Corn Casserole is an moderately easy dinner. Made with 3 (16 oz.) cans whole white hominy, drained and rinsed, 1 (12 oz.) can white shoepeg corn, drained, salt and pepper to taste, 1 (4 oz.) can chopped chilies, drained and butter (about 2 tbsp.), this recipe delivers authentic, satisfying flavors. Preheat oven to 350Β°.
Layer in a 12 x 8 x 2-inch baking dish 1/3 of the hominy and 1/3 of the corn. Sprinkle lightly with salt and pepper.
Add 2 to 3 tablespoons chilies. Dot with butter and 4 more tablespoons sour cream.
Sprinkle with 1/2 cup of both cheeses.
Repeat layers 2 times.
