Homemade Salsa
Homemade Salsa is an moderately easy dinner. Made with 3 medium tomatoes (2 c.), 1/4 c. sliced green onion, 1/4 c. chopped green pepper, 1 to 2 tbsp. snipped parsley or cilantro and 1/2 c. tomato sauce, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Peel and finely chop tomatoes.
Stir together with chopped chili peppers, onion, green pepper and lemon juice.
Add parsley, garlic and pepper.
Place 1 cup tomato mixture in blender or processor.
Blend until just pureed.
Also blend in tomato sauce at the same time.
Stir all ingredients together.
Chill and store tightly covered in refrigerator.
Use as dip for chips or topper for main dishes.
